Ingredients:
1 cup quinoa flour
1 cup fresh spinach (blanched and chopped)
1/2 cup water (adjust as needed)
1/4 teaspoon salt
1 tablespoon olive oil
1/4 teaspoon garlic powder (optional)
1/4 teaspoon cumin (optional)
Instructions:
Prepare the Spinach:
Blanch the spinach by dipping it in boiling water for about 30 seconds, then immediately transfer it to a bowl of ice water to cool.
Drain the spinach and squeeze out any excess water, then finely chop it. Set aside.
Make the Dough:
In a large bowl, combine quinoa flour and salt. If using garlic powder and cumin, add them at this stage.
Add the chopped spinach and olive oil to the flour mixture, stirring to combine.
Gradually add water, a little at a time, while mixing, until the dough starts to come together. The dough should be soft and slightly sticky but manageable. Adjust the amount of water as needed.
Knead the Dough:
Transfer the dough onto a lightly floured surface and knead for about 2-3 minutes until smooth and elastic.
Cover the dough with a clean cloth or plastic wrap and let it rest for about 10-15 minutes.
Shape the Tortillas:
Divide the dough into equal portions (about 6-8 small balls, depending on the size you prefer).
Using a rolling pin, roll each ball into a thin tortilla, about 6-8 inches in diameter. If the dough sticks to the surface, lightly dust it with quinoa flour.
Cook the Tortillas:
Heat a non-stick skillet or griddle over medium heat. Once hot, place one tortilla in the pan and cook for 1-2 minutes on each side or until lightly browned and slightly puffed.
Repeat with the remaining tortillas.
Serve:
Enjoy these spinach quinoa tortillas warm, with your favorite fillings like avocado, grilled veggies, beans, or even scrambled eggs for a healthy wrap.
Tips:
Storage: These tortillas can be stored in an airtight container for up to 3 days in the refrigerator or frozen for up to a month.
Customization: Feel free to add herbs like cilantro or spices like paprika for extra flavor.
These Spinach Quinoa Tortillas are a nutritious and delicious alternative to regular tortillas, adding an extra punch of fiber, protein, and vitamins to your meals.
